Halloween Lunch – Princes Tuna Monster Rolls & Tasty Mini Beasts

Tomorrow it’s Halloween and I’m sure there are many fun Halloween activities going on already as it’s the weekend right before the day! I have two recipes that I’ll be sharing with you. I changed a few things to suit my daughter’s taste and of course you can do the same and substitute things as you wish.Halloween Lunch - Princes Tuna Monster Rolls & Tasty Mini Beasts A Mum Reviews

Princes Tuna Monster Rolls (4)

Ingredients:

  • 4 soft bread rolls
  • Butter, for spreading
  • A few curly lettuce leaves
  • 1 x 160g can Princes Sandwich Tuna, drained
  • 3 tbsp Greek-style natural yogurt
  • 4 cheese slices
  • 8 cherry tomatoes, halved
  • Salad cress or grated carrot

Method:

  1. Split the bread rolls in two, without cutting all the way through. Spread with butter and top with lettuce leaves.
  2. Mix the Princes Sandwich Tuna with the yogurt and share between the rolls.
  3. Cut each cheese slice in half with a zig-zag edge — just use a sharp knife or scissors to do this. Arrange in the rolls.
  4. Position the cherry tomatoes on the rolls to resemble ‘eyes’. Top the rolls with salad cress or grated carrot to look like ‘hair’. Serve at once.

Princes Tasty Tuna Mini Beasts (4)

Ingredients:

  • 8 slices of bread from a large, medium-cut loaf (white or wholemeal)
  • 150g medium fat soft cheese
  • 1 x 160g can Princes Sandwich Tuna, drained
  • ¼ cucumber, thinly sliced
  • 4 cherry tomatoes, sliced in half
  • 2 radishes, sliced
  • 12 raisins or sultanas

Method:

  1. Lightly toast the slices of bread. Use a large round cutter to stamp out circles from the slices of toast.
  2. Spread the soft cheese over the toast circles. Top half of them with the tuna. Cut the remaining toast circles in half and arrange them on top of the tuna mixture to look like ‘wings’. Layer the cucumber slices on top.
  3. Put two tomato slices on one end of each toast circle to look like ‘eyes’. Arrange the radish slices on top, then put a raisin or sultana onto each ‘eye’ with a third raisin or sultana below the eyes to look like a ‘nose’. Serve at once.

I experimented a bit with the eyes again and the nose to using things that my toddler likes such as chocolate raisins, lentil & carrots sticks and fruit bites.

We were sent the tuna and a voucher to buy the other ingredients with to use for this post. As always, all thoughts and opinions are my own.
