Super Easy No-Yeast Yoghurt Pizza Dough Recipe + Topping Ideas

I recently came across no-yeast pizza dough made with yoghurt when browsing online. I was intrigued and gave it a go myself. It went well and this easy meal has now become a staple in our house. We do love making pizza dough the regular way with yeast, flour and water too but it does require more effort and – more importantly – time. A no-yeast pizza is a great option when you’re short on time but still want a tasty homemade pizza. Plus, thanks to the Greek yoghurt, this version is high in protein too. In this blog post, I will share a super easy no-yeast yoghurt pizza dough recipe from the new cookbook The Independent Cook.

How to Make Yoghurt Pizza Dough

This recipe serves 4 (makes 2 large pizzas). Suitable for freezing.

Ingredients for the pizza dough:

  • 300g (10½oz) self-raising flour, plus extra for dusting
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 300g (10½oz) natural or Greek yoghurt
  • 1 tablespoon oil, for greasing

Ingredients for the toppings as in the photograph above:

  • 4 tablespoons tomato purée (tomato paste)
  • 1 tomato or 10 cherry tomatoes
  • ½ red (bell) pepper
  • 100g (3½oz) button mushrooms
  • ¼ red or white onion
  • 1 small courgette (zucchini)
  • 10 pitted olives
  • 75g (2½oz) mozzarella or Cheddar cheese
  • 1 teaspoon dried herbs (oregano or basil), or 1 tablespoon fresh herbs

Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 7.
  2. Mix the flour, baking powder and salt in a large mixing bowl.
  3. Make a well in the middle of the dry ingredients and add the yoghurt.
  4. Use a butter knife to combine the ingredients until the dough starts to come together.
  5. Knead the dough lightly in the bowl, using your hand.
  6. Grease two baking trays with oil and put them in the oven.
  7. Lightly dust your work surface with flour. Divide the dough into 2 equal portions, and roll them both out to your desired shape until about 5mm (¼ inch) thick.
  8. Take the baking trays out of the oven with oven gloves and place the rolled out dough onto the baking trays. Return to the oven for 3–4 minutes.
  9. Prepare your chosen toppings: slice the tomatoes, pepper, mushrooms, onion and courgette. Cut the olives in half and grate the cheese.
  10. Take the pizza bases out of the oven and flip them over with a fish slice.
  11. Evenly spread 2 tablespoons of tomato purée onto each base. Add your chosen toppings to the pizza. Sprinkle with dried herbs, if using. Return the pizzas to the oven and cook for a further 10–12 minutes, or until crispy.
  12. Sprinkle with fresh herbs, if using, to serve.

Notes: You can put any toppings you like onto this pizza. If you are using meat, it needs to be cooked first – good ideas are ham, bacon or pepperoni. If you only have one baking tray, you can cook the pizzas one at a time.
