Vegan Chocolate Adzuki Bites Recipe
|Vegan Chocolate Adzuki Bites Recipe
Happy World Chocolate Day! To celebrate, I’m sharing a yummy recipe from the new cookbook Go Vegan by Marlene Watson-Tara. Her vegan chocolate adzuki bites make a quick and healthy sweet treat. They’re perfect for vegans of course, but also for anyone else who’s looking to find a healthy alternative to snacking on foods high in sugar and refined carbohydrates.
Did you know that adzuki beans are some of the most nutrient-dense foods on the planet? They’re high in protein and fibre, low-fat, and rich in calcium, phosphorus and magnesium. Their high soluble fibre can help to stabilise cholesterol levels too, improve digestive health and keep you feeling full for longer. There’s no reason not to treat yourself to some of these!

- Blend all the ingredients (except the coconut) in a food processor until you achieve a creamy texture. If the mixture is too dry, add a tablespoon or two of water.
