Creating Italian Meals with Organico – Vegetarian Recipes

My favourite cuisine is Italian but I love all things Mediterranean which makes the food brand Organico perfect for me!

Organico is a range of all organic, Mediterranean food. The brand works with suppliers that look out for the environment, as they know quality starts from the soil in which the raw ingredients are grown, and the people that make the products. Organico’s suppliers are passionate about the food they produce, using only organic, raw ingredients, the best production techniques to retain nutrition, and recipes that protect the natural taste of the ingredients.

I was sent a bundle of lovely Organico products to try, including Italian Durum Wheat Pasta, Balsamic Glaze, Italian Garlic Spread & Dip, Grilled Peppers, Vegan Pesto and Primavera Risotto.

With these as a base, I created two delicious meals for my family and thanks to the products above, the meals were simple to prepare and so full of flavour!

Pesto Pasta Bake

Ingredients:

  • Organico Italian Durum Wheat Pasta
  • Organico Italian Garlic Spread & Dip
  • Organico Vegan Pesto
  • Butter
  • Mushrooms, cut into small chunks
  • Frozen Chopped Peppers
  • Creme Fraîche
  • Mozzarella
  • Baby Spinach to Serve

Method:

  • Heat the butter in a large, deep frying pan and fry the mushrooms until they’re properly cooked and browned.
  • Cook the pasta according to the instructions.
  • While the pasta is cooking, make the sauce by adding peppers to the mushrooms, frying for a few minutes, then adding a teaspoon or two of garlic spread, a full jar of Organico Vegan Pesto and Creme Fraîche until you have a consistency that you like.
  • When the pasta is done, drain and mix with the sauce before putting it all in an oven-proof dish and covering with a generous amount of mozzarella. Bake or grill until the cheese has melted and is beautifully golden.
  • Serve with a simple side of fresh baby spinach and enjoy!

Grilled Red Pepper & Primavera Risotto

Ingredients:

  • Organico Primavera Risotto
  • Organico Italian Garlic Spread & Dip
  • Organico Grilled Peppers
  • Butter
  • Mushrooms, cut into small chunks
  • Parmesan Cheese
  • Cherry or Baby Plum Tomatoes
  • Baby Spinach to Serve

Method:

  • Heat the butter in a large, deep frying pan and fry the mushrooms until they’re properly cooked and browned. Add some garlic spread.
  • Cook the risotto with the mushrooms according to the instructions. I didn’t have any white wine in the house so I just used water which worked well.
  • Chop the tomatoes and the grilled peppers. The peppers are easy to cut with scissors and add to the risotto after around 10 minutes or so.
  • Keep cooking and stirring until the rice is cooked properly and add more liquid if needed.
  • When it’s nearly done, add a generous amount of grated Parmesan cheese and cook for a little bit longer.
  • Serve with a simple side of fresh baby spinach and enjoy!

Both these meals were so easy to make and so enjoyable to eat. I’m really pleased with the quality of the Organico products that we sampled and would happily use them all again.
