With so many opportunities for indulging in delicious treats, it can be hard to choose what to cook for Christmas dinner. 1. Prime Ribs
Lovely prime rib roast, also known as standing rib roast. We turn to it for a truly spectacular holiday roast. A well-cooked prime rib is juicy, flavorful, and easy to prepare. It’s also impressive: Your guests will think you worked for hours, but it’ll be your little secret that your oven performed all the work.
Ingredients:
- 1 standing rib roast (about 1/2 pound per person)
- 1 tbsp. kosher salt
- 2 tsp. black pepper
- 1 bunch fresh rosemary
Prep:
- Place rib roast in a roasting pan. Allow 30 minutes to warm up. Oven 450o.
- Season rib roast with salt and pepper on all sides. In a roasting pan, fat-side up, Arrange half the rosemary around the roast.
- After 30 minutes, decrease the heat to 350o and cook 1 hour 30 minutes for medium-rare. (15 minutes per pound)
- Cover with foil for 20 minutes and remove roast from oven.
- To serve, slice ribs along their length, then separate and set aside. Cross-cut the roast against the grain. Serve with ribs and half of the fresh rosemary.
2. Mashed Potatoes
The greatest approach to preparing mashed potatoes is to combine our culinary brains to create these near-perfect spuds. Combine our absolute favorite aspects of mashed potatoes while yet allowing for personalization.
Ingredients:
- 3 lb. mixed potatoes, such as russets & Yukon Golds
- Kosher salt
- 1/2 c. (1 stick) butter, plus 2 tablespoons for garnish
- 1/2 c. whole milk
- 1/2 c. sour cream
- Freshly ground black pepper
Prep:
- Coat potatoes in water and salt generously. Bring to a boil and simmer for 16–18 minutes: drain and re-pot the potatoes.
- Mash potatoes until smooth.
- Meanwhile, warm butter and milk in a small saucepan.
- Pour warm milk-butter mixture over and mix until creamy.
- Stir in sour cream.
- Salt and pepper mashed potatoes liberally.
- Reserve two tablespoons of butter, serve potatoes in a serving bowl. Before serving, sprinkle the dish with additional pepper.
3. Beef Tenderloin
You won’t be fazed by its majesty (and size). Because of a simple marinade and a rapid cook time, beef tenderloin is surprisingly easy to prepare and delicious.
Ingredients:
FOR THE BEEF
- 1/2 c. extra-virgin olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. whole grain mustard
- 3 sprigs fresh thyme
- 3 sprigs of fresh rosemary
- 1 dried bay leaf
- 2 cloves garlic, smashed
- 2 tbsp. honey
- 1 (2-lb.) beef tenderloin, rested at room temperature for 1 hour
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 2 tsp. fresh rosemary, finely chopped
- 1 clove garlic, minced
FOR THE YOGURT SAUCE
- 1/2 c. Greek yogurt
- 1/4 c. sour cream
- 1 tsp. prepared horseradish
- Juice of 1/2 lemon
- Kosher salt
Prep:
- Pour in the honey and thyme and mix well. Marinate meat in plastic wrap for 1 hour or up to 1 day. Optional: Preheat tenderloin before baking.
- Set oven to 450o. A wire rack and aluminum foil on a rimmed baking sheet. Remove tenderloin from marinade and dry. Then, salt, pepper, rosemary, and minced garlic all over, then rack.
- Roast for 20 minutes for rare. 10 minutes before slicing.
- Meanwhile, combine yogurt, sour cream, horseradish, lemon juice, and salt in a medium bowl.
- Serve tenderloin sliced with sauce.
