A tiffin is a great choice when you want to make something tasty – it doesn’t require much prep time, there’s no baking involved, and it’s easy! The thing you do need a lot of is chocolate but that is not a problem. It’s easy to experiment with tiffins too as you can pretty much add whatever you want to the mix.
My recipe below has been developed for the festive season with luxurious gourmet popcorn from Joe & Seph’s, clotted cream shortbread biscuits, buttery macadamia nuts and beautiful cranberries.
The flavours work really well together! Though the process of making this delicious treat or dessert is really easy, it does end up looking quite impressive and festive too.
Indulgent Festive Tiffin with Gourmet Popcorn, Macadamia Nuts & Cranberries
Let’s move on to the full recipe. Here are the ingredients that I used:
100ml golden syrup
2 Tbsp white caster sugar
2 Tbsp cocoa powder
2 tsp vanilla extract
100g milk chocolate
100g dark chocolate
100 ml dried cranberries (plus extra for decoration)
200g shortbread biscuits (I used Paterson’s Clotted Cream Shortbread Fingers)
200g milk chocolate for the topping
100g white chocolate for the topping
1 pack of Joe & Seph’s Yule Log Gourmet Popcorn (save half for decoration)
Joe & Seph’s Milk Chocolate Popcorn Stars (for decoration)
Melt the butter in a large saucepan (you’ll be using this to mix other ingredients together too). Add the golden syrup, sugar, cocoa powder and vanilla extract. When melted, turn off the heat and add 100g milk chocolate and 100g dark chocolate in chunks. Stir until the chocolate has melted.
Mix in roughly chopped shortbread biscuits and add the cranberries, macadamia nuts and Joe & Seph’s Yule Log Gourmet Popcorn. Remember to save some for decorating the top of the tiffin.
Line a tin or glass Tupperware box with parchment paper (tip: wet it first to make it fit the shape perfectly). Around 20x20cm is a good size. Then pour the mix in, spread the mix evenly with a spoon if needed, the pop into the fridge to set for a while.
Next, melt the milk chocolate for the topping and pour onto the tiffin. Let it set for a few minutes, then melt the white chocolate and pour in a stripey pattern onto the milk chocolate.
Then it’s time to decorate the tiffin! Get the extra macadamia nuts, cranberries, Yule Log popcorn and the Joe & Seph’s Milk Chocolate Popcorn Stars and get creative filling the top of the tiffin with these yummy things!
Once done, cover and put back in the fridge. Your tiffin will be ready to be enjoyed a few hours later but will taste even more amazing when it’s been chilling for a day or two.
