Italian food is easily my favourite – fresh food packed with real flavours, lots of delicious cheese, bread, pasta, pizza, and vegetables. If I could only choose one cuisine to eat for the rest of my life, it would be Italian and I wouldn’t be bored!

Since the start of lockdown, my husband has been working from home too, so we’ve been making an effort to have lunch together most days and trying to think of some lunch meals that are a bit more fun and exciting than the usual stuff.
You can’t go wrong with a warm sandwich toasted in butter and filled with delicious ingredients… In this blog post, I’ll share a new recipe idea that I created with the Ciao Gusto brand Aurrichio that makes three types of Provolone cheese:
- Thin slices of mild Provolone cheese
- Thin slices of strong Provolone cheese
- Thin slices of smoked Provolone cheese

Recipe: My Delicious Aurrichio Provolone Cheese Lunch Sandwich
For 2 servings, you need:
- 2 ciabatta breads
- 8 slices of Aurrichio Provolone Cheese (pick your favourite or mix)
- 1 large, ripe plum tomato
- 1 ripe avocado
- A handful of fresh basil
- Sea Salt Flakes
- Extra Virgin Olive Oil
- Butter & Oil for frying
Method:
Cut the breads in half and drizzle the inside with a bit of Extra Virgin Olive Oil. For each sandwich, add 2 slices of Aurrichio Provolone Cheese to one side (I used the smoked option), then lay slices of tomato and basil leaves on top.
Slice the avocado and add half to the other side of each sandwich. Sprinkle the tomato and avocado with a bit of sea salt.
Then add a layer of Aurrichio Provolone Cheese (I used the strong option) over the avocado and carefully bring the two sides of the sandwiches together.
Heat a bit of butter and a little bit of vegetable oil in a large frying pan that will fit the two sandwiches. Fry slowly and gently, pressing the sandwiches halves together with a spatula until golden and toasted. Turn carefully to fry the other side.
Remove from the pan and cut with a bread knife to reveal the gorgeous tricolore colours from inside the sandwich – green, white and red like the Italian flag.
The combination of Aurrichio Provolone Cheese, fresh tomatoes and basil and creamy avocado is absolutely delicious! Using a mix of smoked and strong Provolone cheese worked beautifully and the flavours balanced perfectly.
